Our History

Discover the history and philosophy of Bistro Hortus, your local bistro.
Bistro Hortus was born from a passion for authentic cuisine, rooted in respect for local and organic ingredients. Our commitment to gluten-free eating reflects our desire to create tasty and accessible dishes for all. We firmly believe that gastronomy should be both delicious and sustainable, celebrating the riches of Quebec's terroir.

Our green roof
Hortus has two green roofs in the heart of Old Quebec, right above you! Our harvests end up directly on your plates.
Our summer harvests
Our green roofs provide some of the vegetables and fruits used in our plates. The limited space offers us a limited yield, which is why we partner with Quebec suppliers producing organic fruits and vegetables.

Our bees
We have several hives on Île-d’Orléans on the large strawberry fields at our partner Oh Bio. Three beehives occupy the roof of the Hôtel du Vieux Québec and participate in the pollination of our gardens.
The importance of bees on biodiversity
Not to mention their honey production, which we love so much, bees are an integral part of the majority of ecosystems. Bees provide nearly 80% of pollination, and therefore the reproduction of flowering plants. They also play an important role in our food chain, considering that 35% of our fruits and vegetables depend on insect pollination.

Honey from the comb
Have you ever tasted fresh honey directly from the comb? We offer you the opportunity to taste it!
